Spring Fresh Asparagus And Avocado Salad

This salad celebrates the flavours of spring with tender asparagus and creamy avocado, complemented by sweet cherry tomatoes and aromatic basil. The lemon and olive oil dressing adds brightness and freshness to the salad, while toasted pine nuts provide a crunchy texture and some protein.

Add a soft boiled or poached egg for a vegetarian version and enjoy this seasonal and nutritious salad that’s free from grains, gluten, dairy, and sugar!


  • 1 bunch of asparagus, ends trimmed (about 300g)
  • 1 avocado, diced
  • 150g cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 15g fresh basil leaves, chopped
  • 30g pine nuts, toasted (optional)
  • Juice of 1 lemon
  • 30ml extra virgin olive oil
  • Salt and pepper to taste


  1. Bring a pot of water to a boil. Add the trimmed asparagus and blanch for 2-3 minutes until just tender. Remove the asparagus from the boiling water and immediately plunge into a bowl of ice water to stop the cooking process. Drain and pat dry.
  2. In a large mixing bowl, combine the blanched asparagus, diced avocado, halved cherry tomatoes, thinly sliced red onion, and chopped basil leaves.
  3. In a small bowl, whisk together the lemon juice and extra virgin olive oil to make the dressing. Season with salt and pepper to taste.
  4. Pour the dressing over the salad ingredients in the large mixing bowl.
  5. Gently toss everything together until the salad is evenly coated with the dressing.
  6. Sprinkle toasted pine nuts (if using) over the salad just before serving.
  7. Taste and adjust seasoning if necessary.
  8. Serve the asparagus and avocado salad immediately as a side dish or a light main course.
