I love eating some of these beauties in the morning and sometimes make an extra batch to snack on or have as my lunch if time is short.
They are very low in carbohydrates, therefore great for everyone with diabetes or trying to control their weight. They are high in good fats, protein and BIG on taste, to keep you full, totally content and happy for quite a few hours 🙂
For the full benefits of low carb, don’t add maple syrup or honey (no,no, even raw honey isn’t great for that insulin spike) and stick to a small handful of berries and some raw honey(unpasteurised – uncooked/unheated)
Here goes:
Ingredients for one person:
1 Tbsp coconut flour
1 tbsp ground almonds/almond meal
2 eggs
a little almond milk to dilute to a pancake consistency
1 small pinch of salt
1 tbsp coconut oil
1 tsp raw honey (optional)
Method
Mix all ingredients while melting the oil in a pan
Make small-sized pancakes and fry each side a couple of minutes until golden
Add some fresh berries, a little coconut yogurt and drizzle a little raw honey if you want – enjoy!
